We’ve long admired the work of the team at Finca El Paraíso, whose experimental processing methods consistently push the boundaries of flavour while retaining a deep sense of structure and sweetness.

This coffee, YN-09, is a stunning example of their precision and control. It showcases how meticulous fermentation and thermal shock processing can preserve the elegance of the Castillo variety while revealing entirely new dimensions in the cup.

Expect a structured, refined profile where red apple brightness meets silky pear sweetness and a smooth caramel finish. A beautiful balance of classic and modern.

Producer Story

Behind this coffee is the Bermúdez family, producers at the forefront of Colombia’s modern coffee movement. At their farm Finca El Paraíso, located at 1960 MASL in Piendamó, the focus is on turning great coffee into great flavour - by design.

Brothers Alex and Samuel combine years of agricultural knowledge with state-of-the-art fermentation equipment and a deep respect for craft. Each coffee is developed through carefully managed microbial environments, controlled temperatures, and oxygen-free tanks that let the chosen yeast do its work with precision.

The result is not just complexity - it’s repeatable complexity. Coffees like YN-09 show what’s possible when science and sensory mastery meet.

From the cupping table

From the first aroma, YN-09 is bright and inviting. The fragrance evokes caramel, red apple, and hints of soft tropical fruit. On the palate, it’s juicy and clean with a crisp acidity - think pear and starfruit - layered over a rounded body and caramel sweetness.

The aftertaste is long and syrupy with notes of stewed apple and apricot, giving a tactile finish that’s both creamy and precise. It’s the kind of coffee that evolves as it cools, offering new perspectives with every sip. A perfect showcase of controlled fermentation that still feels natural and expressive.

Roast Dates
  • Roasting Day: We roast our coffee every Tuesday.
  • Order Cut-off: Place your order by midnight on Monday to have it included in the Tuesday roast.
  • Dispatch Timing: Orders placed before the cut-off will be roasted and shipped within the same week.
  • Late Orders: If you place your order after midnight on Monday, your coffee will be roasted and shipped the following week.

As a small-batch roastery, this schedule ensures that you receive your coffee at its freshest.

How long should I 'rest' my coffee?

To enjoy the full flavour and nuances of your coffee, we recommend the following rest periods from the roast date:

Coffee Roasted for Filter:

  • Dark: 2 days
  • Light to Medium: 4-5 days
  • Very Light and/or Very Dense Coffee: 10 days or more

Coffee Roasted for Espresso:

  • Dark: 2 days
  • Medium: 8-10 days
  • Light: 10 days or more

Resting allows the coffee flavours to develop fully.

While these recommendations generally provide the best results, individual preferences and specific beans may vary.
