Our Approach to Coffee

From origin to cup, inspired by the rhythm of the Irish seasons.

We seek out coffees with clarity and character, but choose them through the lens of Ireland - where long, grey winters ask for depth and warmth, and bright summers call for fruit and freshness. We roast with restraint, so what’s already there can shine, and we see brewing as simple and rewarding: a few tools, a little care, and a cup that captures both craft and season.

Sourcing & Seasons

When we source, we’re drawn to coffees with a clear sense of place - those that speak of their origin, process, and the people who bring them to life. Yet our choices are also shaped by the seasons here in Ireland.

The coffees we work with must complement the rhythm of the year: reflecting the abundance of summer, and offering the warmth and depth we crave in the colder, darker months.

In this way, the work of distant farms connects with the cycles of home, carrying us through the year with coffees that feel alive to their time and place.

Roasting

We don’t roast to impose a style or chase trends. Every coffee already holds its own story, its own goodness, waiting to be revealed.

Our role is simply to let it shine. We roast lighter, preserving sweetness, clarity, acidity, and nuance before any ‘roasty’ flavours and aromas take over. Nothing added, nothing masked - just the coffee as it is.

Brewing

Because of how we roast, we don’t tailor coffees for a single brewing method. A coffee’s character is already there - how you choose to brew it is up to you.

We believe you don’t need elaborate equipment to experience great coffee. With just a grinder, kettle, V60, filters, and a cup, you can brew café-quality filter coffee at home.

While certain coffees may naturally lend themselves to particular brews - whether for their mouthfeel, body, or aroma - we see brewing as deeply subjective. What matters is discovering the way you most enjoy the cup in front of you.
