This washed coffee is light, aromatic and distinctly floral, with bergamot-like citrus and ripe apricot sweetness. It is a delicate but characterful cup, offering the clarity and elegance that make Chiroso such a compelling variety.

Producer Story

Los Alpes is owned and managed by Carlos Emilio Vélez, a producer whose path into coffee began almost by accident.

Carlos originally worked alongside his father as a cattle rancher in Bajo Cauca. In 1985, a land exchange brought the family to Los Alpes, a farm in the mountainous region of Santa Bárbara. When they arrived, they found around 800 coffee trees already growing across the property. While his father remained focused on livestock, Carlos gradually became more interested in coffee, learning through experience and developing a lasting passion for the crop.

Over the following 39 years, he continued refining his approach, experimenting with new varieties, fermentation techniques and environmentally responsible farming practices. Under his care, Los Alpes has developed into a quality-focused farm built around patience, observation and continual improvement.

For this lot, cherries are collected throughout the week and begin fermenting for around 24 hours before being combined. The coffee then undergoes a further 60 hours of controlled fermentation before being carefully and evenly dried. This extended process helps preserve the clarity, structure and aromatic character of the finished cup.

From the cupping table

Los Alpes opens with the fragrant citrus character of bergamot, followed by a soft floral aroma that gives the cup an almost sweet tea-like quality.

As it cools, the fruit becomes rounder and sweeter, with ripe apricot bringing a gentle stone-fruit richness. The acidity is bright and precise rather than sharp, while the finish remains clean, delicate and lingering.

Roast Dates
  • Roasting Day: We roast our coffee every Tuesday.
  • Order Cut-off: Place your order by midnight on Monday to be included in that week's roast.
  • Dispatch Timing: Orders placed before the cut-off are roasted and shipped within the same week.
  • Late Orders: Orders placed after midnight on Monday will usually be roasted and shipped the following week. However, if we have freshly roasted coffee available from the previous Tuesday's roast, we'll send that instead (while stocks last) so you don’t have to wait an extra week.

As a small-batch roastery, this schedule ensures that you receive your coffee at its freshest.

How long should I 'rest' my coffee?

To enjoy the full flavour and nuances of your coffee, we recommend the following rest periods from the roast date:

Coffee Roasted for Filter:

  • Dark: 2 days
  • Light to Medium: 4-10 days
  • Very Light and/or Very Dense Coffee: 10 days or more

Coffee Roasted for Espresso:

  • Dark: 2 days
  • Medium: 8-10 days
  • Light: 10 days or more

Resting allows the coffee flavours to develop fully.

While these recommendations generally provide the best results, individual preferences and specific beans may vary. If in doubt, wait 2 weeks after roast date.
